Chewy Oatmeal Raisin Cookies

After-school cookies are a must! Between homework and after-school activities, the pace of life amps up in the fall. Prepare these classic chewy oatmeal raisin cookies to make afternoons easier and keep everyone's bellies happy.
Oatmeal raisin cookies are beloved in our house. They are ideal for packed lunches or a quick grab-and-go snack as kids head out to play. Cookies and milk may be a cliche, but they make the best after-school snack for kids.
Chewy Oatmeal Cookies
Ingredients:
1/2 cup unsalted butter, softened
2/3 cup brown sugar
1 egg
1/2 tsp vanilla
3/4 cup flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1 1/2 cup rolled oats
3/4 cup raisins
Preparation:
In a large bowl, cream butter, brown sugar, egg, and vanilla. In a separate bowl whisk together flour, baking soda, cinnamon, and salt. Stir the flour mixture into the butter mixture. Sit in oats and raisins. Chill the dough for at least 1 hour, up to overnight. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper and portion the dough into heaping tablespoon-size balls. Bake for 13-15 minutes.
Notes:
Oats: Old-fashioned whole oats provide the ultimate hearty, chewy, thick texture.
Eggs: Room-temperature eggs are preferred.
Raisins: To make plump raisins for your cookies, soak them in warm water for 10 minutes before using them.
