Delicious Banana Bread

When we were dating, my husband used to rave about his mom’s banana bread. As someone who detests bananas, I wrote it off…until I tried it for myself. It was, indeed, delicious. When we got married, my sweet mother-in-law shared her recipe with me, and now our family of four enjoys it regularly as a special treat.
There are about a million ways to modify this recipe to include ingredients your family enjoys - add white chocolate chips, cinnamon, or any number of tasty treasures to give it a little flavor bump. With two family members who have nut allergies, we always skip the nuts, but if you don’t have to hit the ER for anaphylactic shock, I’d recommend trying it with a few walnuts sprinkled in.

Ingredients:
1/2 C butter
1 C sugar
2 eggs, beaten
2 C sifted all purpose flaur
1 teaspoon baking soda
3 very ripe bananas (I use only 2!)
1/3 C applesauce
Preparation:
Preheat oven to 350 degrees.
Grease and flour loaf pan.
Cream butter and sugar. Add beaten eggs. Then, add flour and baking soda. Mash bananas well and add applsauce. Pour into loaf pan and bake for 45-60 minutes.
Fun Tips:
When you flour the loaf pan, use sugar instead!
If you’re not a huge fan of bananas, use only two.
Sprinkle sugar on top of batter before popping it in the oven for a crunchy top layer.
