Recipe: Peanut Butter Energy Bites

Need a mid-day pick-me-up that doesn’t come with a side of guilt? Stop reaching for the can of Coke (my personal weakness), and join me in munching on these yummy energy bites. As long as your family is free of nut allergies, these are sure to be a treat for everyone!

This original recipe came from a Fit for Mom recipe book I got a few years ago. Our family has modified it over time, and you can too. Toss in whatever makes you smile, and make it your own!

Ingredients:

  • 1 cup oats

  • 1/2 cup coconut flakes (original recipe calls for 1 cup…so you do you)

  • 1/2 cup mini cinnamon chips (original calls for chocolate chips…also good. We also like white chocolate.)

  • 1/2 cup peanut butter (we use creamy)

  • 1/2 cup ground flaxseed

  • 1/3 cup honey

  • 1 teaspoon vanilla

Directions: Mix the dry ingredients together. Add peanut butter, honey and vanilla. Stir until mixed. Chill in the refrigerator for at least 30 minutes. Roll into balls and store covered in the fridge.

I hear these can be frozen…but we always eat them too fast to test that option!
