Recipe: Small Batch Guac

Raise your hand if you like guac! Double hands up over here. I especially like it in the summer by the pool on a weekend. Fortunately, my husband is an expert guacologist - yep, that’s now a word. You’re welcome.

Sadly, our kids won’t eat guacamole (not entirely sure they’re our!) and since guac goes bad so quickly, we now make it in small batches. So, from our table to yours, here’s my husband’s small batch guac recipe:

  • 1 avacado

  • 5 cherry tomatoes, diced

  • 1 green onion, diced

  • 1 tsp lime juice

  • 1 tsp olive oil

  • 1/2 tsp sea salt

  • Cilantro - as much as you like

  • Garlic - as much as you like

Dice the veggies. Cut and smash the avocado. Add all other ingredients and mix together with the back of a fork. (Yes, our kitchen tools are fancy over here.) Dip your chip and enjoy poolside! Happy summer everyone!
