Easy Family Dinner Recipe: Chicken Fried Rice
Soups are for winter, and grilling is for summer. Our family loves those things, but I’m always searching for good “crossover meals.” They’re the delicious meals that feel like a good fit in the summer heat or the frigid winter. One of the meals in our crossover rotation is chicken fried rice, so I’m sharing that recipe below and hope you enjoy it!
Easy Chicken Fried Rice
4 cups cooked rice (white or brown work!)
2 Tbsp sesame oil
1 lb chicken breast
1/2 onion, diced
2-3 chopped carrots
1/3 cup frozen peas
2 eggs
1/4 cup soy sauce (add more if you’d like!)
Optional: We often toss in a Sun-Bird Fried Rice seasoning packet, but I’ll make this even without it.
Salt and pepper chicken breast. In a large frying pan, heat 1 Tbsp sesame oil and cook chicken breast to 165 degrees. Remove chicken from pan and cut into bite-sized pieces. In the same pan, use remaining oil to cook onion and carrots until tender. Add frozen peas. Cook until unfrozen. Move vegetables to sides of the pan and scramble eggs in the center. Add cooked rice and soy sauce (and optional seasoning packet) to mixture. Fry rice a couple of minutes. Return chicken to mixture. Enjoy!
